ABOUT DINNERS ON THE BLUFF:
Connect, learn, and dine with experts at Eagle Bluff Environmental Learning Center! Presented annually February through April, Eagle Bluff invites speakers from around the country to speak on a variety of outdoor, educational and research topics. Paired with a three-course meal from a local restaurant partner, each event aims to showcase interesting information, delicious dishes, and meaningful discussion.
ABOUT THE PRESENTER:
Josh Feinberg is a Professor of Earth & Environmental Sciences at the University of Minnesota since 2007. He earned his BA in Geology from Carleton College in 1997 and after earning a PhD (2005) from the University of California, Berkeley, he served as a NERC Postdoctoral Fellow at the University of Cambridge. His research has uncovered new discoveries about the behavior of the Earth’s magnetic field, tracked environmental change through time, compiled paleoflood histories from speleothems, monitored groundwater quality in the Twin Cities, and characterized novel magnetic materials.
DINNER MENU:
Salad Course: mixed greens, dried apricots, sunflower seeds, red onion, English cucumbers, balsamic vinaigrette
Main Course: Coq au vin (red wine braised chicken thighs, or stewed lentils for vegetarian) lardons, mushrooms, carrots, onion, roasted potatoes
Dessert Course: carrot cake w/ orange marscarpone

ABOUT THE CHEF:
Tyler Shipton is the Executive Chef and owner of Juniper’s Restaurant. His culinary journey has placed him in some of the country’s most prominent restaurants. In 2012, he decided to embark on his own journey and was one of the opening Chefs and owners of Minneapolis’ Borough. In 2015, he moved to the west coast, with a desire to explore the food scene. After spending several years as an Executive Chef of various top restaurants along the coast in San Diego, the pandemic forced Chef Tyler and fiancé Ame back to the farm he grew up on, and together, the duo founded Juniper’s in Lanesboro, MN.
